Place a pot with the water over medium heat. When it starts heating up, add the trahana, the salt and the butter.

Stir constantly using a wooden spoon.

Add the cheese after a while.

Continue stirring until it is done! When it is ready, serve with melted butter or with a few drops of oil. My grandmother used to add pieces of bread when she removed it from heat.
