Pour the water in a bowl.

Add the salt and whisk to dissolve completely.

Place the cheese in the container you plan to store it in and add as much brine as is needed to cover it completely.

Keep the container in the fridge.

Every time you need a piece of cheese, cut it with a knife, rinse it with a little running water and serve.
