This has become one of my favorite sweets ever since I first made it. It is extremely healthy, tasty, aromatic with rich texture and great caramel color, much better than what they sell in stores!

Place the tahini (sesame seeds paste) in a bowl and set it aside.

Place the honey in a non-stick pan and let it boil for about 5-10 minutes so that most of its water evaporates and so it can set.

You know that it is ready when you pour a drop of the boiling honey in a glass of cold water. If the drop stays firm and becomes a small ball, the honey is ready. Instead of a glass of water you can use a small empty place that you have left in the freezer for a while to freeze.

As soon as it boils you set it aside for 1 minute and then add the lemon zest and mix.

Empty all the honey with the lemon zest in the bowl with the tahini and mix well, either using two spoons or by hand with single-use gloves. If you have any extra ingredients, add those as well.

When you are done thoroughly mixing it so that the mixture is well combined, place it on greaseproof paper, preferably in a bowl so that it gets a nice shape and set it aside to cool without covering it. It will get firmer as it cools.

Ready! You can store it in your kitchen cupboard.
