Ingredients

About half a kilo
  1. 300 gunhulled tahini (you can find it in all stores that sell organic products and in most supermarkets, if you don't, just try hulled tahini, I have only made it using unhulled)
  2. 210 graw honey (organic)
  3. zest of 2 lemons (absolutely necessary, it balances the ingredients and lifts off the taste)
  4. Optionally whatever else you might like for taste
  5. Tools: non-stick pan, greaseproof paper, single-use gloves

Steps

  1. 1

    Place the tahini (sesame seeds paste) in a bowl and set it aside.

  2. 2

    Place the honey in a non-stick pan and let it boil for about 5-10 minutes so that most of its water evaporates and so it can set.

  3. 3

    You know that it is ready when you pour a drop of the boiling honey in a glass of cold water. If the drop stays firm and becomes a small ball, the honey is ready. Instead of a glass of water you can use a small empty place that you have left in the freezer for a while to freeze.

  4. 4

    As soon as it boils you set it aside for 1 minute and then add the lemon zest and mix.

  5. 5

    Empty all the honey with the lemon zest in the bowl with the tahini and mix well, either using two spoons or by hand with single-use gloves. If you have any extra ingredients, add those as well.

  6. 6

    When you are done thoroughly mixing it so that the mixture is well combined, place it on greaseproof paper, preferably in a bowl so that it gets a nice shape and set it aside to cool without covering it. It will get firmer as it cools.

  7. 7

    Ready! You can store it in your kitchen cupboard.
