Stir-Fried cabbage and onion with cumin

I started making this during my first year away at university many years ago when cheap was as high priority as tasty. It makes a great side dish with any grilled meat or fish. Or you can load a portion on to a wedge of nice bread, top with a piece of mozarrella or grated cheese and stick under the grill for a couple of minutes to make an original and very tasty bruschetta. Heat the oil in a large frying pan and gently fry the cumin seeds to release their flavour

Slice the onions

Add to the pan, stir well and cook over a low to moderate heat to bring out all their sweetness

Slice the cabbage into thin slices

When the onion is soft, sweet and browning

add the cabbage

Turn the heat up and start to stir

Add the juice of one lemon once the cabbage has softened (after about 10 minutes),turn the heat down and leave for another 10 minutes stirring now and then to prevent sticking.

Finally add a slosh of light soy sauce, stir well, serve and enjoy!!
