If the mixture is too dry to stick together as a dough, add another egg yolk and pulse again

Tip the mixture onto a flat surface and bring together as a dough.

Knead for 5-10 minutes until smooth.

Wrap in clingfilm and leave in fridge until ready to use. At least 30 mins
