Once we have all the ingredients together, start by mixing the achiote with the vinegar.

Then blend the garlic with the salt, cumin, and peppercorns until everything is combined. Gradually add the achiote and chiles until you get a smooth paste.

Place the meat on a tray and spread the marinade over it. Add a layer of onion and bacon until all ingredients are used up.

Pour the remaining marinade over the meat and let it rest overnight for better flavor.

Skewer the meat and place a piece of pineapple on the tip, with several pieces of meat at the bottom of the tray.

Cover with aluminum foil and bake for 30 minutes at 428°F (220°C). Remove the cover and continue cooking for another 30 minutes.

Serve with cilantro, chopped onion, limes, salsa to taste, and pineapple.
