Steps

Melt the butter in a pot over medium low heat. Do not raise the heat too high. The idea is to sweat the cabbage in the butter, and if the temperature is too high, the cabbage will burn and become bitter.

Cut the cabbage in half and then chop each half into roughly 2 cm wide strips. Be sure to include the core! It acquires a lovely soft texture and tastes amazing!

Place cabbage into pot on top of butter. Put the lid on and give a good shake so that the butter coats all the cabbage.

Season with pepper

Place sausages on top of cabbage

Cook until the sausages have become firm to the touch. They will change colour as they steam, approximately 15 to 20 minutes. Shake the pot every now and then to ensure the cabbage doesn't burn.

Remove sausages to a plate

Empty the packet of soup into the cabbage and give a good stir. This helps to absorb the excess moisture as well as adding some flavour.

Optionally brown the sausages (it takes about 30 seconds to do in a hot pan). Make sure to pat them dry before browning.

Serve sausages on top of cabbage and enjoy!

To finish, I sometimes add grated cheese and sprinkle the top with paprika and peri-peri.
