Ingredients

  • 350 gryoung/green papaya, cut into long matchsticks
  • 100 grmeat, cut to taste
  • 1/2 tsptamarind, dissolved in a little water
  • 2red chillies, thinly sliced
  • 1 sectiongalangal, crushed
  • 2 stalkslemongrass, crushed
  • 1 1/2 tbsppalm sugar
  • 2bay leaves
  • 4lime leaves
  • 700 mlwater
  • to tasteSalt
  • Oil for frying
  • GROUND SPICES:
  • 9shallots
  • 5 clovesgarlic
  • 7cayenne peppers
  • 2 cmturmeric
  • 2 cmginger
  • 3 cmkencur
  • 3candlenuts, toasted
  • 1 tspcoriander
  • 1/2 tsppepper
  • 1/2 tspdried shrimp paste
  • FOR SPRINKLING:
  • 1 tbspfried shallots
  • 1 sprigbasil, pull off leaves

Steps

  1. 1

    Use water to boil the meat until tender and set aside.

    Saute ground spices, galangal, lemongrass, bay leaves and lime leaves until fragrant.

    Add the seasoning into the meat stew, add sliced papaya. Cook until papaya is soft.

    Add tamarind water, palm sugar, and salt. Adjust taste, add red pepper and turn off the heat.

    Serve the vegetables with a sprinkling of fried shallot and basil.
