Ingredients

  1. 5Polish sausages; sliced
  2. 2 cupsauerkraut
  3. 1large yellow onion; medium slice
  4. 1yellow bell pepper; medium slice
  5. 1red bell pepper; medium slice
  6. 5 clovegarlic; minced
  7. 1 cupchicken stock
  8. 1large pinch kosher salt and black pepper
  9. as neededvegetable oil

  1. 1

    Heat vegetable oil in a large pot. Add sausage and bell peppers. Season. Stir when first side of sausage is caramelized. Add sauerkraut. Stir. After 2 minutes, add garlic. Saute until caramelized.

    Add chicken stock. Reduce by 3/4. Serve.

    Variations; Roasted bell peppers, add extra stock to make it a stew, potatoes, paprika, shallots, celery, bacon, habanero, parsely, beer, celery root or seeds, fennel, fennel seed
