Ingredients

  1. 350 gryoung/green papaya, cut into long matchsticks
  2. 100 grmeat, cut to taste
  3. 1/2 tsptamarind, dissolved in a little water
  4. 2red chillies, thinly sliced
  5. 1 sectiongalangal, crushed
  6. 2 stalkslemongrass, crushed
  7. 1 1/2 tbsppalm sugar
  8. 2bay leaves
  9. 4lime leaves
  10. 700 mlwater
  11. to tasteSalt
  12. Oil for frying
  13. GROUND SPICES:
  14. 9shallots
  15. 5 clovesgarlic
  16. 7cayenne peppers
  17. 2 cmturmeric
  18. 2 cmginger
  19. 3 cmkencur
  20. 3candlenuts, toasted
  21. 1 tspcoriander
  22. 1/2 tsppepper
  23. 1/2 tspdried shrimp paste
  24. FOR SPRINKLING:
  25. 1 tbspfried shallots
  26. 1 sprigbasil, pull off leaves

Steps

  1. 1

    Use water to boil the meat until tender and set aside.

    Saute ground spices, galangal, lemongrass, bay leaves and lime leaves until fragrant.

    Add the seasoning into the meat stew, add sliced papaya. Cook until papaya is soft.

    Add tamarind water, palm sugar, and salt. Adjust taste, add red pepper and turn off the heat.

    Serve the vegetables with a sprinkling of fried shallot and basil.
