Ingredients

30 minutes
3-4 servings
  • 4eggs
  • 1tomato, chopped
  • 5lime leaves
  • 1/2 tbspchicken stock powder
  • 1 tsptamarind paste, dissolve in 1tbsp water
  • Salt
  • Sugar
  • Vegetable oil
  • 7red chilli peppers
  • 5curly red chillis
  • 5shallots

Steps

30 minutes
  1. 1

    Make scrambled eggs: beat eggs with a pinch of salt, scramble in a hot skillet, put to rest.

  2. 2

    Grind all chillis, shallots, and 3tbsp water to a rough paste. You can use pestle and mortar or a chopper.

  3. 3

    Heat oil in a skillet, saute the ground spices until fragrant.

  4. 4

    Add tomatoes and lime leaves, saute until tomatoes soften, about 2 minutes.

  5. 5

    Season with salt, sugar, and stock powder. Add tamarind water.

  6. 6

    Add eggs and stir well. Enjoy with steamed rice.
