Peel the eggplant, sprinkle it with salt to draw out the moisture, then fry it. Let the fried eggplant drain on paper towels. Brown the ground beef in a pan, seasoning it with cinnamon and black pepper.

Add a very small amount of the eggplant frying oil to the bottom of a pot to prevent sticking and add flavor. Spread the cooked ground beef evenly in the pot, then layer the fried eggplant on top. Mix the Egyptian and jasmine rice together to keep the rice from becoming mushy, soak the rice for 1 hour, then spread it over the eggplant in the pot.

Boil 1 1/2 cups water (about 355 ml) with salt, black pepper, and cinnamon. Pour the seasoned water over the rice, then cook the maqluba over low heat until the rice is fluffy and cooked through.
