Steps

Put the sole in a bowl. Add salty water and give it some thyme

Peel and shape your potatoes

Put them on a simmer until they are soft, but not too soft they break apart

Fillet the fish and dry with some kitchen towel

Finely chop an onion and fry on a low heat

Add the bones of the sole to the onions

Slice a handful of baby tomatoes

Add the tomatoes and a couple slices if lemons to the onions. Splash in some of the water from step one

Fry the potatoes in a little bit of oil

Remove the sole from step six. Add some butter and a glug of white wine and a few capers

Flour the fish, then add skin side down to a frying pan with butter and thyme

After a minute or two add the sole to sauce and spoon the sauce over. Keep the pan on a low heat for this step

Add the potatoes back to the pan from step eleven

Plate up and enjoy

Sit back and relax, while someone else does the washing up
