Ingredients

  1. 50 mlcooking oil
  2. 150 gramslarge onion, chopped
  3. 2cardomon pods
  4. 2whole cloves
  5. 500 gramslamb cubes, thick rib & shin
  6. 150 gramslarge ripe tomato
  7. 5 mlmasala (teaspoon)
  8. 5 mlchopped cumin, ground as alternative
  9. 2 mlchopped coriander
  10. 2 mlsalt
  11. 5 mlchopped garlic
  12. 3 mlchopped fresh ginger
  13. 1chopped fresh red chilli
  14. 250 mllamb stock
  15. 400 gramspeeled baby potatoes
  16. 1 tsptumeric
  17. 1 tspchopped fennel

Steps

  1. 1

    Heat the cooking oil in a heavy based saucepan,

  2. 2

    Fry the onion, cardamon and cloves until the onion is translucent (clear). Remove from saucepan.

  3. 3

    Fry the meat cubes till brown then add the fried onion and chopped tomato with the rest of the spices,

  4. 4

    Add half of the lamb stock and simmer gently on a low heat for a good 30 minutes.

  5. 5

    Add the baby potatoes and the rest of the stock as needed.

  6. 6

    Simmer for 20 minutes until the potatoes are tender.

  7. 7

    Serve with desired rice i.e. Jasmine or Basmati rice. I would sugest a cucumber sambal or a raita and roti bread to accompany the meal.
