Ingredients

  • 1 bagbaby spinach
  • 1 cupstrawberries chopped
  • 1english (seedless) cucumber chopped
  • 1/2 cupsliced scallions
  • 1/2 cupslivered almonds
  • 1/2 cuppoppyseed dressing (ingredients listed below)
  • 1 cupolive oil
  • 1/3 cupsugar
  • 1/4 cupwhite vinegar
  • 1 tsppaprika
  • 1 tsppoppy seeds
  • 1/2 tspdry mustard
  • 1/4 tspsalt

Steps

  1. 1

    Toss spinach, strawberries,cucumber, scallions,and almonds together

  2. 2

    Drizzle with 1/2 cup of the poppy seed dressing just before serving

  3. 3

    Poppy seed dressing: combine sugar, vinegar, paprika, poppy seeds, dry mustard, and salt in a bowl and whisk

  4. 4

    Whisk in the olive oil to the vinegar mixture

  5. 5

    Mix well before serving
