A super quick and easy way to enjoy cornbread. I always make this with breakfast - my family loves it :-)

Combine flours and sugar and mix in egg.

Slowly add in cold water to make a thick batter- it takes just a little less than 1/2 cup water.

Heat up electric griddle - 350°-375°.

Add bacon drippings. 6-8 tablespoons should do it...I usually just fry up half a pack of bacon right before I start this and use the drippings. *Alternatively you could use butter, margarine or any mild tasting oil.*

Place a tablespoon of batter on the griddle. Repeat with remaining batter. Do not let sides touch.

Brown on each side - cook just like you would a pancake.

Remove and serve immediately.

I eat it with just butter, my daughter likes it with cinnamon butter and syrup & my fella likes making mini sandwiches out of them and puts eggs & bacon on his. Enjoy - psychobetty- XOXO
