Ingredients

  1. 2 cupall purpose flour
  2. 1 tspbaking soda
  3. 4 tspbaking powder
  4. 3/4 tspcinnamon
  5. 1/2 tspea. all spice, nutmeg and salt(I used 1/4 salt)
  6. 1/2 cupbutter
  7. 2/3 cupgranulated (castor) sugar
  8. 2eggs
  9. 10 ozcan tomato soup
  10. 3 tbspwater
  11. 1 cupraisins
  12. 1/2 cuptoasted, chopped pecans or walnuts

Steps

  1. 1

    Preheat oven to 375°F. Grease 9x13" loaf pan, set aside.Put all dry ingredients in a bowl and mix well with a fork. Set aside.

    In large bowl cream butter, then gradually add sugar and cream well. Add eggs one at a time, mixing well in between. Beat in dry ingredients alternately with the soup and water. Make 3 dry and 2 wet additions.

    Batter will be very thick. Fold in nuts and raisins, turn into prepared pan and smooth top. Bake in preheated oven 45 minutes or until a toothpick inserted in center comes out completely clean.

    Cool completely then frost with cream cheese frosting or lemon curd frosting OR mix lemon and cream cheese!! Even better !! also good plain
