Ingredients

  • 2 cupsself-rising flour (about 250 grams)
  • 4green onions, thinly sliced
  • 7 ouncesstrained Greek yogurt (about 200 grams)
  • 3eggs
  • 1 poundspinach, fresh or frozen (about 500 grams)
  • 1/2 bunchdill, finely chopped
  • 10 1/2 ouncesfeta cheese, crumbled (about 300 grams)
  • 3/4 cupcorn oil (about 180 ml)
  • salt
  • pepper
  • sesame seeds for sprinkling (optional)

Steps

    If using fresh spinach, place it in a pot and cook until wilted without adding water. If using frozen spinach, skip this step.

  2. 2

    In a large bowl, combine the yogurt, eggs, and oil. Mix with a spoon, then add the cheese, spinach, dill, and green onions.

  3. 3

    Finally, add the flour, salt, and pepper. Stir everything together with a spoon just until combined—do not overmix.

  4. 4

    Grease a 28 cm (11-inch) baking pan and pour in the mixture. If you like, sprinkle with sesame seeds. Bake in a preheated oven at 350°F (180°C) for about 1 hour, until the pie is nicely golden. That’s when it’s ready. You can also use gluten-free self-rising flour if needed; it turns out just as delicious.
