I made a lunchbox for my boyfriend to take to work. We were tired of pork and chicken, so I tried making shrimp instead. Since I was in a hurry, I used a satay seasoning mix. The flavor turned out great—definitely a winner!

I made a lunchbox for my boyfriend to take to work. We were tired of pork and chicken, so I tried making shrimp instead. Since I was in a hurry, I used a satay seasoning mix. The flavor turned out great—definitely a winner!

Peel and devein the shrimp.

Pour the marinade powder from the Lobo packet into a bowl. Add 1/4 cup (70 ml) coconut milk and mix well.

Marinate the shrimp for 30 minutes, then thread them onto skewers. Grill over medium heat until cooked through.

To make the dipping sauce, pour the sauce powder from the packet into a saucepan. Add 3/4 cup (180 ml) coconut milk and 1 tablespoon vegetable oil. Mix well, then cook over heat until thickened. Transfer to a bowl and set aside.

For the cucumber relish, combine vinegar, sugar, and salt in a saucepan. Heat until the sugar dissolves, then let cool. Place sliced cucumber, red chili, and shallots in a bowl. Pour the cooled mixture over the vegetables and sprinkle with a little cilantro.

Arrange everything nicely and serve.
