Ingredients

4 servings
  • 400 gramsgluten/egg-free dry linguine
  • 3courgettes, grated or thinly sliced, skin on
  • 3 tbspolive oil
  • 1 clovegarlic, finely chopped
  • 1zest of a lemon
  • 1 pinchcrushed chillies
  • 1 smallbunch of basil leaves
  • 1salt & pepper to taste

Steps

  1. 1

    Cook the linguine according to the pack directions then drain

  2. 2

    Add the courgettes, oil, garlic, zest, chillies and most of the basil

  3. 3

    Season to taste and toss together. Serve with a drizzle of extra oil and the remaining leaves scattered on top
