Ingredients

  1. 1 cupbutter (room temperature)
  2. 2 cupssugar
  3. 2eggs
  4. 1 tspvanilla extract
  5. 2 cupsall purpose flour
  6. 1 tspbaking powder
  7. 1/2 tspsalt
  8. 1 cupunsweetened coconut milk
  9. 1-1 1/2 cupsweetened coconut flakes
  10. glaze:
  11. 2 cupspowdered sugar
  12. 5 tbspcoconut milk
  13. 1/2-1 cupsweetened coconut flakes

Steps

  1. 1

    Preheat oven to 350

  2. 2

    Cream together butter and sugar

  3. 3

    Add vanilla (mix well)

  4. 4

    Add eggs (mix well after each egg)

  5. 5

    Sift together flour, baking powder and salt. Add a third of flour mixture and mix well.

  6. 6

    Add a third of coconut milk and mix well.

  7. 7

    Keep alternating flour and coconut milk until all combined well together.

  8. 8

    Add coconut flakes and mix well.

  9. 9

    Coat bundt pan generously with cooking spray or whatever you use for baking. I use a homemade cake release. I'll post that recipe for those who are interested.

  10. 10

    Bake for 60 minutes.

  11. 11

    Let cool for 10 minutes.

  12. 12

    Turn pan over onto cake plate and the cake should release with no problem.

  13. 13

    Spoon glaze over cake.

  14. 14
