Mixed Stuffed Vegetables (Mahshi Meshakel)

Peel the onions, making sure to use large ones. Cut each onion halfway through lengthwise with a knife. Place the onions in a pot of water on the stove and bring to a boil. Cook until just tender—do not overcook. Drain the onions, then separate the layers. Stuff and roll as usual.

Line the bottom of the pot with carrot slices, then arrange the stuffed vegetables as shown in the picture.

Add the stuffed grape leaves on top.

Pour in salted water or broth—here, I used about 1 1/2 cups water (about 350 ml) because the zucchini releases liquid as it cooks.

Once it comes to a boil, reduce the heat and simmer for about 30 minutes, or until everything is cooked through. Serve with breaded cutlets or kofta. Enjoy!
