Heat up water in a small pot and once its getting hot, add 1 noodles spice and once the water is boiling add the noodles, cook till water dries off making sure the noodles is not too soft

Heat up frying pan, once its hot add veg oil, then onions, tomatoes and pepper and then fry for about 4 minutes afterwards, add the remaining spice, mint leaf, curry powder, basil leaf and thyme and then stir; allow it fry for another 2 minutes

Then add carrot, parsley leaf after mixing everything together, add noodles and mix all together, allow it cook for a minute or 2 then trn off the heat and serve with fried eggs by the side
