Ingredients

  • 5boneless chicken breast
  • 5jalapenos, sliced in half lengthwise
  • 20 slicebacon
  • 4 ozcream cheese, softened
  • 1 cupcolby jack or chedder cheese, shredded
  • 1salt and pepper to taste
  • 1 cupbbq sauce

Steps

  1. 1

    slice chicken beasts in half (like a hamburger bun).

  2. 2

    place between wax paper and pound until it's 1/4 inch thick.

  3. 3

    season

  4. 4

    mix the two cheeses together and smear about 1 Tbsp into each pepper half

  5. 5

    place the pepper on the chicken breast and wrap up as best as you can. (place the pepper cheese side down)

  6. 6

    wrap each chicken breast completely with two pieces of bacon.

  7. 7

    start at one end, wrap half the breast and finish the second half with the other piece of bacon.

  8. 8

    bake at 400° for 20 minutes, turning once to help cook the bacon.

  9. 9

    reduce heat to 375°, change pans to lose some of the bacon fat, cover In bbq sauce and bake for another 10 minutes or til done.
