  • 20 ozCheese filled Tortellini
  • 6 ozFresh baby spinach
  • 8 ozHam or ham steak
  • 1 largeRed bell pepper
  • 1/4 cupbutter (not margarine)
  • 1Coarsely ground black pepper - optional

    To cook tortellini, bring salted water to a boil in casserole. Add tortellini and cook according to directions.

  2. 2

    As tortellini cooks, place spinach into large colander. Dice ham. Finely dice red bell pepper. Drain cooked tortellini over spinach in colander.

  3. 3

    Add butter to a skillet. Heat over medium heat for 5 to 7 minutes or until butter is a deep brown color. Immediately add bell peppers. Reduce heat to low. Add ham tortellini and spinach. Then gently toss to coat.

  4. 4

    Serve. Sprinkle with black pepper, if desired.
