Tortellini Alfredo Spinach and Tomato

Ingredients

  1. 2 (9 oz)packages of tortellini
  2. 1 Tblsolive oil, extra virgin
  3. 1 Bagfresh spinach
  4. 1 boxgrape tomatoes
  5. 1red pepper chopped
  6. 1yellow pepper chopped
  7. 1medium onion chopped
  8. 1 Tblspesto
  9. 2 Tblsminced garlic
  10. 1.5 jarsAlfredo sauce
  11. 1 tsppepper to taste

Cooking Instructions

30 mins
  1. 1

    In a large cast iron or regular skillet drizzle olive oil. Turn on medium heat add in red pepper and yellow pepper.

    Once peppers are cooked add in minced garlic and chopped onion.

  3. 3

    Once onions are soft add in grape tomatoes cook until they pop. Add in pesto mix well.

    Add in as much fresh spinach as you want. Cook until spinach wilts. Then add in 1-2 jars of Alfredo Sauce.

    Add in cooked tortellini follow directions on package.
