  1. 1 lbcucumber
  2. 1 pintscherry tomatoes
  3. 1/2Vidalia onion
  4. 2 tbspchopped fresh parsley
  5. 1 tbspapple cider vinegar
  6. 1 tbspolive oil
  7. 1 pinchsalt and ground pepper
  8. 1 bunchmixed spring time greens
  9. 1/4 lbFresh mozzarella

  1. 1

    In a large serving bowl toss together the cucumbers cherry tomatoes onions parsley vinegar olive oil salt and pepper to taste let stand for 10 minutes before serving

  2. 2

    In separate bowls add a small handful of the greens place cucumber salad on top and small handful of fresh mozzarella cubed
