3 cupleft over mashed potatoes
4chopped green onions
2eggs
1/2 cupflour
1 tbspchives
2 tbsppharmesan cheese
1salt & pepper to taste
1cooking spray

in a bowl mix all ingredients until well combined

spray electric fry pan with cooking spray

drop potato mixture by the heaping tablespoons full
4

fry on medium heat till golden brown on each side
