Ingredients

30 mins
4 servings
  1. 1 tbspoil
  2. 2onion, finely chopped
  3. 500 gramslean minced lamb
  4. 350 gramsbasmati rice
  5. 2 tbspgreen thai curry paste or amount to taste
  6. 300 mlhot chicken stock
  7. 400 mllight coconut milk
  8. 140 gramsfrozen peas
  9. 1lemon cut into wedges
  10. 1coriander leaves to garnish

Steps

30 mins
  1. 1

    Heat the oil in a pan and cook the onion for 5 minutes until soft

  2. 2

    Add the lamb and brown off, then stir in the rice, curry paste, stock and coconut milk

    Bring to the boil then simmer gently for 10 minutes until the rice is tender and the liquid is almost completely absorbed

    Stir in the peas and cook a further 3 minutes

    To serve, sprinkle over some coriander garnish and give everyone a lemon quarter to squeeze over

  6. 6

    2 tbsp of thai green curry paste gives a mild flavoured finish. Feel free to use more or use a hotter curry paste

I didn't care much for this recipe. It just wasn't what I expected which would have been fine but it didn't have much flavor. If I were to make it again I would definitely add more curry and other spices. My children like it though.
