Ingredients

  1. 1small aubergine/eggplant, cut into chunks
  2. 1courgette/zucchini, cut into chunks
  3. 1red onion, cut into halved wedges
  4. 2red peppers, cut into chunks
  5. 4medium tomatoes, quartered
  6. 4 tbspolive oil + extra for drizzling
  7. 4chicken breasts, skin on or off
  8. 3 sprigsrosemary or 2 tsp dried leaves
  9. 1salt and fresh black pepper

Cooking Instructions

    Preheat the oven to gas 6 / 200C / 400°F

  2. 2

    Lay the vegetables in a shallow roasting tray, pour over the oil and give them a gentle mix to get them all coated

  3. 3

    Nestle the chicken on top and tuck the rosemary sprigs into the veg

  4. 4

    Give the chicken a drizzle of oil and season well with some salt and fresh black pepper

  5. 5

    Roast for 20-25 minutes until the vegetables are soft and the chicken is golden and the juices run clear
