Ingredients

  1. 3Hard-cooked eggs chilled and chopped
  2. 12Pimiento stuffed Spanish olives chopped
  3. 2 tbspplus 1 teaspoon Mayonnaise
  4. 1 tspSour cream
  5. 1/2 tspDijon mustard
  6. 3/4 tspDried parsley
  7. 1/4 tspOnion powder
  8. 1/4 tspGround black pepper
  9. 1/4 tspCelery seed
  10. 1 pinchSalt (to taste, check before adding)

Steps

    Combine all ingredients gently and chill for at least 1 hour to allow flavors to blend.

This is a great egg salad recipe! Used homemade mayonnaise and served on a bed of arugula. The green olives gave the dressing a great balance of flavor. Yum!
