I used what veggies I had on hand, cabbage and onion. This was so good! My 3 almost 4 year old loved these! Hers had no onion or cabbage of course, but she tore it up! I also didn't have the green onion for the top so I used parsley so it would look pretty. :-)

Ingredients

4 servings
  1. 8 sliceHam
  2. 4 largeEggs
  3. 1/4 smallOnion (optional)
  4. 1/4 smallBell pepper (optional & and color you like)
  5. 8 tbspShredded Cheddar cheese (swiss cheese would be fantastic also)
  6. 1A splash of milk for the eggs
  7. 1salt & pepper to tase
  8. 1Tops of green onions

Cooking Instructions

    Pre-heat oven to 350°. In a small pan, sauté onions and peppers till tender.

    Spray muffin pan with non-stick cooking spray, unless you have one of those good non-stick pans, and place one slice of ham in each making a little cup.

    While veggies are cooking, beat together eggs, milk, and salt & pepper.

    Add a spoon full of veggies to each cup. Put 1 TBSP of cheese in each then fill ham cup with egg. The egg will also fill outside the ham, but that is fine. It takes about 1/2 an egg for each cup. Top with the chopped green onion tops and bake for 20-25 minutes.
