Ingredients

3-5minutes
3 servings
  1. 6 sliceswhole wheat brown bread
  2. 1/2 cupBombay semolina
  3. 2 tbsprice flour
  4. 1/2 cupcurd
  5. 1/2 cup or as per requirementwater to make a Idli batter
  6. to tasteSalt
  7. Pinchcooking soda
  8. Ingredients for seasoning idli batter-
  9. 2 tbspoil for seasoning
  10. 1 teaspoonsmall mustard
  11. 1 tablespoonwhite sesame seeds
  12. 1onions finely chopped
  13. 3 tbspgrated coconut
  14. 1/2 cup finely cut coriander leaves
  15. Idli cupcake topping -
  16. 1onion finely chopped
  17. 1tomato finely chopped
  18. 1/2capsicum finely chopped
  19. 1grated carrot
  20. to tasteSalt
  21. to tasteRed chilli powder
  22. 1/4 cupFinely chopped coriander leaves
  23. as per tasteChat masala
  24. as per tastePizza cheese or regular cheese
  25. 16-18silicon Cup moulds
  26. as needed oil for greasing Silicon cup moulds

Steps

3-5minutes
  1. 1

    Cut all the four sides of brown bread with the help of knife.

  2. 2

    Make bread crumbs from 6 slices of bread with the help of food processor or you can break them with your hand into small pieces.

  3. 3

    Now add these bread crumbs in a deep bowl.

  4. 4

    Now addin rice flour, curd, salt, Water in a bread crumb bowl and mix all the ingredients with the help of spoon.

  5. 5

    Keep it aside for 10-15 minutes.

  6. 6

    After 10 minutes transfer all the ingredients to a mixer jar.

  7. 7

    Blend all the ingredients by adding some water to make a smooth idli batter.

  8. 8

    Now heat 2 tablespoon of oil in a small pan and add all the seasoning ingredients stir fry until nice aroma start coming and switch of the flame.

    Add in chopped coriander leaves to the seasoning and alow it to cool for 2-3 minutes.

    Now transfer this seasoning to the bread idli batter.

  11. 11

    Now ready the brown bread veggie idli cup cake topping -transfer all the ingredients of idli cup cake topping in a bowl and mix.

    Grease all the silicon cup moulds with some oil.

  13. 13

    Now pour this bread idli batter into greased moulds and fill upto half.

  14. 14

    Spread some bread idli cup cake topping over each silicon cups.

  15. 15

    Over this topping spread some red chilli powder,chaat masala and grated cheese as per your taste.

  16. 16

    Keep all the silicon cups inside the microwave and microwave them for 3-5 minutes.

  17. 17

    Microwave timing will change according to the capacity of your microwave.

    You can check by inserting tooth pick at the centre of idli cup cake if it comes out clean then your brown bread idli cup cakes are ready.

    You can ready these bread idli veggie cup cakes also in the oven at 180 degree centigrate for 12-15 minutes.

    Allow them to cool and demould the idli cup cake moulds.

  21. 21

    Serve hot with coconut chutney or any chutney your kids like in their tiffin or for evening snacks.
