A true southern yummy dish! Traditional cajun dirty rice is usually made with chicken livers and gizzards. I personally dont care for em so I use the boudain that contains a small amount of pork liver that I cant see mixed in with the sausage lol Still comes out extremely good!

I can eat this as a meal all by itself. It is also good as a side dish. You can spice it up as much as you like to your taste. #Cajun

This dish was originaly published as a bean and rice dish only. I had to spin it and add a lil spice. The spices, chicken and garlic were added to give it a kick and a little substance. I have made this for several different occasions and people, everyone raves about it.I have done it with a ground Italian sausage and added more heat by using the (Ro*tel Hot) instead of the mild.I hope you enjoy it as much as my family and friends do.

This is my husband's creation, he's made it for years. Now that I do all the cooking, I make it. I realize it's not an original recipe, only a twist on something pre-made, but it is still delicious either way! *For a non-spicy version use the Kielbasa and no Cajun seasoning, for a little bit of spice use the Andoullie. Also tastes great with chicken.

I discovered this recipe when I moved to New Orleans fourteen years ago. It is one of my go-to dishes when I don't have a lot of of time to cook and it always goes over well at a pot luck.
