Cooking Instructions

Mix eggs, fish sauce, and ramps in a mixing bowl.

Heat a wok or skillet to high heat and add the oil.

Once the oil is very hot, gently pour in the egg mixture and allow it to puff up. Swirl wok to allow excess egg to cook.

Once set, flip the omelette and cook until finished.

Serve with rice and any Thai hot sauce or dipping sauce of your choice.
