Polish Mess

My husband loves kielbasa and I was trying to think of ways to cook it for him besides the obvious combination with sauerkraut. I'm always trying to think of ways to get more vegetables into our diet and I came up with this hash-type recipe. We usually substitute turkey kielbasa to save on calories but either turkey or traditional kielbasa will work well.

We usually substitute turkey kielbasa to save on calories but either turkey or traditional kielbasa will work well.

Heat 1tablespoon cooking oil in large, deep-sided skillet or dutch oven over medium-high heat. Sauté the kielbasa in the skillet until browned, about 8 minutes, stirring occasionally. Remove kielbasa from pan with slotted spoon to plate and set aside.

Add 2 tablespoons oil to skillet and add cubed potatoes to the skillet and cover. Cook 7 minutes stirring once.

Remove lid from skillet and stir potatoes. Add chopped onions and stir to distribute. Cook until onions are softened and potatoes golden brown.

Once potatoes and onions are cooked through, add the garlic and stir to combine. Immediately following the garlic, add the cabbage, salt, pepper, and Balti Seasoning and stir or toss to combine. Cook 2-4 more minutes until the cabbage is softened. Add the cooked kielbasa back to the skillet and cook 1-2 more minutes or until heated through.

Spoon into individual dishes or plates and top with Sriracha. Serve hot.

(Cook's Note: For a brunch top each individual plate with a dippy fried egg!)
