Pre heat oven to 200 C. Spray muffin tray with cooking spray. I used a jumbo muffin tray so only made 6 out of this batch.

Add all ingredients together and mix well

Pour into trays. I sprinked brown sugar and chopped pecan nuts on top. Put into oven and bake for 20 - 30 minutes or until a skewer comes out clean when testing
