Boxing day soup
Started as a way to use up Christmas day leftovers, now I have to make on a regular basis, but the name stuck! This is a chuck it in recipe..
Steps
- 1
Chuck the vegetables into a saucepan, add stock. N.b. an English quart is 40 fl oz not 32!
- 2
Put on lid, bring to boil, lower heat and simmer for 15-20 minutes. Stir regularly.
- 3
Blitz with a hand held blender, or in a liquidiser, until as smooth as you like
- 4
Bring back to boil, stirring constantly, it sticks and burns, very quickly. Check seasoning and add salt and pepper to taste, I like lots of black pepper!
- 5
Serve. You can drizzle in cream or creme fraiche, add croutons
- 6
The soup pictured contained roast potatoes, candied sweet potatoes, peas, sweetcorn, carrots, broccoli and greens. You can make from scratch with fresh vegetables but it doesn't taste as good.
- 7
Just ate the pictured bowl for breakfast, straight after I made the soup and photographed it! 9 am here in U.K.
