Ingredients

12 servings
  • 1/2 cupmilk of choice. i used drinking coconut milk
  • 1/2 cupmashed overripe banana
  • 3 1/2 tspcoconut oil
  • 2 1/2 tsppure Vanilla Extract
  • 2 tspApple cider vinegar
  • 3/4 cupflour of choice. i used Wholemeal Spelt Flour
  • 1/2 cupgranulated sugar of choice. i usee coconut sugar
  • 1 tspstevia Extract
  • 1/4 cupcacao powder
  • 1/2 tspbaking powder
  • 1/2 tspbaking soda
  • 1 pinchsalt
  • 1/2 cupchopped walnuts. Optional

Steps

  1. 1

    Preheat oven to 350°F. Line 12 muffin tin holes.

  2. 2

    In a medium bowl mix banana, oil, vanilla, and vinager. Set aside for 5 min.

  3. 3

    In a large bowl combine all remaining ingredients and stir well.

  4. 4

    Our wet into dry and stir until evenly mixed.

  5. 5

    Portion the batter evenly among muffin tins. Add to oven and bake for 20 to 25 min. Until toothpuck inserted into the center comes out clean

  6. 6

    Place on a cooling rack and allow to completely cool.
