Chop up the onion and cook it over a medium heat for 5 mins in the oil until it’s nice and soft. Don’t worry if it catches at the edges, that’ll make it tastier.

Chuck in all the beans, the tomatoes, the chipotle paste and the dried herbs and spices and give it a good stir.

Crush the garlic and stir that in too.

Leave it on the hob for 15-20 mins to thicken, giving it a stir every now and then.

Once it looks like a dinner, make four wells with a wooden spoon and crack an egg into each one.

Cover it and leave it for about 10 mins (keep checking it) until the eggs are cooked but not hard.

Sprinkle the coriander leaves over the top and serve.
