Korean Style Spicy Chicken

This is one of those dishes, I fell in love with when I was in South Korea. Probably the only one I like better is basically the same dish, just made with pork belly 😊. This isn't hard to make, and you can adjust your heat level to your liking. This one is a little spicy. Don't have gochujang, sub 2 tsp. Chili powder (mild), 1/2 tsp Cayenne powder (hot), 1/2 tsp sugar for each tablespoon. It is not the same flavor, but gets you closer. Don't have sesame oil, just use vegetable oil.
The jalapeno is not standard in actual Korean recipes, but I think it adds a nice touch to this dish.

Ingredients

10 minutes cook
4 servings
  1. 1 poundboneless skinless chicken
  2. 1 1/2Tbl. Gochujang
  3. 3 clovesgarlic
  4. 2 inchpiece fresh ginger
  5. 2Tbl. Soy sauce
  6. 1Tbl. Sugar
  7. 1Tbl. Sesame oil
  8. 3 stalksgreen onion
  9. 1fresh jalapeno
  10. Garnish
  11. 1Sesame seeds
  12. 1Scallions
  13. 1Cilantro

Steps

10 minutes cook
  1. 1

    I'm using chicken thighs

    Cut into bite size pieces, place in a bowl

    Clean and dice garlic, and ginger, add to bowl

    Clean and dice jalapeno, add to bowl

    Clean green onions, cut white part small, green part longer, add to bowl

    Add the rest, and mix it all together. Let sit for awhile. I usually start rice at this point, and cook the meat right before the rice finishes.

    When ready, add 1-2 Tbl. Oil to a skillet, heat on medium. I'm using sesame here, but any will work.

    When the pan is hot, dump the chicken in the pan.

    Cook until chicken is done, and any liquid has reduced and thickened, this took about 8 minutes, but you need to decide on yours since many factors play into "done".

    I like to serve it like this, maybe a sprinkle of sesame seeds for garnish

    Maybe some green onions for garnish

    I start by taking both rice and chicken at the same time, on each bite.

    Towards the end, I just mix it all together

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
