Spaghetti, Soya Mince & Mushroom

Soya Mince, or quorn, is one of the healthiest foods i've come across. Doesn't weigh you down like beef or pork. The combination of vegetables, fruit, spaghetti and soya mince makes this really healthy. It is also well balanced - with carbs, vitamins and protein in plentiful supply! It's soooya good!

Mix one part Soya mince to 3 parts boiling water and let stand. After 5 minutes, drain.

Fry Mushrooms in Olive Oil while you wait.

After water has evaporated from the Mushrooms, add Garlic and Italian Seasoning. Fry a further minute or two.

Add Soya Mince to the pan. Cook until excess water has evaporated.

Serve in a bowl with the cooked Spaghetti. Top with The Feta, thyme, lemon juice and a dash more olive oil. Enjoy!
