Bring 2 cups of water to a boil

Once at a boil add rice. Cover and let simmer for 10-12 minutes

With about 3 minutes left, stir in most of the cilantro and allow rice to simmer again.

While the rice simmers crack and beat an egg, adding cilantro, pepper, and salt. Add milk (I used soy milk) and scramble

Chop up the egg into fine bits and stir into the rice along with more salt and pepper. Add butter and stir.

Serve immediately as a side or a dish
