Preheat oven to 375°.

In a medium bowl mix red pepper, spinach, gouda cheese slices, bacon, garlic and black pepper.

Spoon 1 tbsp of mixture onto the bottom end of the zucchini slice. Roll the zucchini slice up and secure with a toothpick.

Garnish with a sprinkle of fresh chopped dill on top.

Bake for 20-25 minutes on a lightly greased baking sheet. Serve warm.
