We serve this as a side dish with any meat dish. Its simple and effective.
Steps

Heat the olive oil on a medium to high heat in a saucepan.

Next add the onion and garlic and brown. Takes about 3-4 minutes.

Reduce heat to medium.

Add the rice to the saucepan. Continously stirring for about 4-5 minutes.

Add one cup of water and stir.

Cook for another 5 minutes.

Then add the grated carrot, salt and 1 more cup of water and stir.

Cook for about another 5 minutes and add the last cup of water.

Let the liquid cook down and let the rice rest for 5-10 minutes.

Check seasoning and serve.
