Ingredients

1 hour
  1. 7 lbFresh tomatoes(approximately 22 medium)
  2. 3 eachGreen peppers
  3. 12 eachJalapeño peppers
  4. 1 cupChopped cilantro
  5. 4 eachLarge sweet onions
  6. 3 tbspLime juice
  7. 1/2 cupSalt
  8. 1 cupSugar
  9. 4 tspMinced garlic
  10. 1 cupApple cider vinegar
  11. 4 eachHabanero peppers( if you like it really hot!)

  1. 1

    Chop onions, cilantro, green peppers, jalepeno peppers, and the habanero peppers if you are adding them.

  2. 2

    Blanch the tomatoes in hot water( approximately 150 degrees) for 3 minutes. Transfer to a cold water bath.

  3. 3

    Core and peel the tomatoes and run them through a salsa strainer.

  4. 4

    Pour the strained tomatoes into a large pot and add all of the other ingredients.

  5. 5

    Stir well and bring to a boil. Transfer the mixture to jars while hot for sealing. Add lids and tighten bands firmly. Jars will seal as salsa cools.

  6. 6

    Makes approximately 12 pint jars.

Does this need to be refridgrated? I make pickles this way but I thought Salsa need to be properly canned.
