Ingredients

45 mins
  1. 1 largepackage of colored bell Peppers, or 4 large single bell peppers. I use the minis for party's, because they're fun size, and sweet.
  2. 1 lbLean hamburger, or half a pound of ground sausage, combined with half a pound ground beef.
  3. 2 tbspminced garlic, or one tablespoon minced fresh.
  4. 1 smallCan of minced black olives.
  5. 1/2 lbsliced mushroom. you'll need to dice them If you're preparing the small peppers.
  6. 2 tbspfinely grated parmesan cheese.
  7. 1/4 tspgarlic powder
  8. 1 largeegg
  9. 5 1/2 ozshredded mozzarella cheese
  10. 1/4 cupshredded parmesan cheese.
  11. 1 cupspeggeti sauce
  12. 1salt pepper to taste.
  13. 15 ozwhole milk ricotta or cottage cheese. i prefer ricotta when doing stuffed peppers, it's easier to work with.

    Preheat oven to 350°F.

  2. 2

    Begin by lightly salting the inside of the peppers.

  3. 3

    Then brown your ground beef, adding minced garlic olives, mushrooms, garlic powder, salt & pepper. Drain fat, add sauce & set aside.

  4. 4

    Stir in speggeti sauce, taste, add any additional seasoning to your liking.

  5. 5

    In a separate bowl, combine 2 tbs parmesan, egg, and ricotta cheese. Season with salt & pepper.

  6. 6

    Divide the ricotta mixture between peppers. Stuff peppers half full then top with meat sauce mound with mozzarella cheese. You can also allow meat sauce to cool, then combine together to stuff peppers.

  7. 7

    Sprinkle with 1/4 cup parmesan. Bake for 45 minutes.
