Ingredients

  1. 1eggplant, peeled
  2. 1/4 cuppanko bread crumbs
  3. 3 tbspparmesan cheese, divided
  4. 1/2 tspdried oregano
  5. 1/2 tspdried basil
  6. 1/4 tspsalt
  7. 1 tbsplite mayo
  8. 2 cupyour favorite pasta sauce
  9. 1-- or --
  10. 1 can(15 ounces) tomato sauce
  11. 1/2 tspbasil
  12. 1/2 tsporegano
  13. 1/2 tspgarlic powder
  14. 2 tbspmilk
  15. 1 dashsalt and pepper

Steps

  1. 1

    On a plate, mix together 2 tablespoons cheese, bread crumbs, and seasonings.

  2. 2

    Slice eggplant into 1/2" slices

  3. 3

    Spread a very thin layer of mayo on one side of each eggplant slice. Dip side with mayo into bread crumb mixture, then place in glass baking dish, breadcrumbs facing up.

  4. 4

    Cover loosely. Microwave on high 7-9 minutes or until tender.

  5. 5

    Top with pasta sauce and remaining cheese and serve.

  6. 6

    If making pasta sauce, simmer all sauce ingredients until ready to use.
