Ingredients

  1. 1 lbboneless, skinless chicken thighs, cut into bite size pieces
  2. 1/2 cuplow sodium chicken broth
  3. 3 tbspseasoned rice vinegar
  4. 1/4 cupdark brown sugar
  5. 4minced garlic cloves
  6. 1 tspsriraha chili sauce
  7. 3 tbspoyster sauce
  8. 2 tspfresh cracked black pepper
  9. 1 tbspsoy sauce
  10. 1/4 tspground ginger
  11. 2hot chili's, chopped.I used jalapenos this time. Remove seeds
  12. 2sliced shallots
  13. 1 tspcornstarch
  14. 2green onions, sliced
  15. 1canola oil for cooking

Cooking Instructions

    Combine all ingredients except chicken, onions hot pepper and green onions in a bowl and whisk well, set aside.

    In a large skillet heat enough oil to lightly coat bottom of pan. Add chicken and brown all sides. Remove chicken from pan to a plate. Add shallot and hot pepper to pan and cook until softened, about 2 minutes. Add sauce and cook at a simmer until it becomes a slightly thickened sauce, about 4 to 5 minutes.

    Return chicken to sauce, add scallions and just heat through, a minute or two.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
